After completing a BSc in Comparative Physiology at Queen Mary College in 1981 Joy moved to St Bartholomew's Hospital Medical School to study for her PhD in adrenocortical endocrinology which was awarded in 1984. Joy remained at Barts as a Royal Society Research Fellow and was appointed to a lectureship in Biochemistry when Barts and The London preclinical schools merged in 1990. Joy continued her research, principally into paracrine regulation of adrenocortical function, until 2006. She was awarded a DSc by the University of London for her contribution to the field of adrenal endocrinology in 2003. She has published over 100 original research papers and 30 reviews.

In 2005 Joy was appointed Director of the Graduate School at Barts and The London (Dean for Postgraduate and Postdoctoral Studies) following her long-standing interest in the quality of postgraduate education. She also has a strong interest in the pastoral care of students, having served as Deputy Dean for Students from 2004 to 2009. Joy was appointed Professor of Postgraduate Studies at Barts and The London in 2009.

Joy has retained her links with Endocrinology, having served as an elected member of the Society for Endocrinology Council from 2001 to 2005 she continues to serve on Council as the Education representative, chairing the Education and Career Development sub-committee. Joy is a Senior Editor of the Journal of Endocrinology and acted as Editor of the Endocrinologist from 2006-2008. Joy has experience of scientific advisory work, serving on the Food Standards Agency Committee on Toxicity from 2003-2009.

As a teacher Joy has lectured throughout the MBBS course on topics ranging from endocrinology to professionalism. She has set up and run a BSc course in Endocrinology and presently contributes to a BSc course in the School of Biological and Chemical Sciences. In 2007 Joy co-authored an Endocrine textbook: Hinson, Raven and Chew 'The Endocrine System' which was published by Elsevier. A second edition is in preparation.

Joy is one of the departmental Athena SWAN champions at the IHSE.
